Litt i seneste laget på sesongen har jeg laget en porsjon med urtesalt. Den beste tiden å lage urtesalt er naturligvis når hagen bugner av friske urter midt på sommeren, men ettersom dette virker å være året da jeg er sent ute med alt, ble det slik.
Jeg brukte noen urter som ble plukket og fryst i sommer, og noe av det som fortsatt var å finne ute i urtehagen.
Oppskriften er: 3 liter friske urter og 2,5 dl salt som moses til grøt i en food processor. Deretter has urtegrøten på et stekebrett og tørkes i stekeovnen til det er helt tørt.
Til slutt en rask tur i food processoren igjen for fint og jevnt urtesalt som helles på tette glass.
Jeg har laget urtesalt flere ganger tidligere, og det er alltid spennende å smake resultatet ettersom urtesaltet blir forskjellig fra år til år utifra hvilke urter man bruker.
Jeg går utifra at det er en rekke utmerkede urteblandinger man kan sette sammen, men jeg blander bare helt tilfeldig (og en smule ukritisk) urter jeg dyrker i hagen.
Denne gang brukte jeg løpstikke, gressløk, timian, oregano, salvie og sar, pluss et par små løk fra kjøkkenhagen. (Jeg hadde bare to liter urter tilsammen, så jeg reduserte saltmengden med en tredel og laget litt mindre porsjon enn oppskriften er på).
I have made a small batch of late autumn herb salt. The best time to make herb salt is of course in the middle of the summer when the garden is full of fresh herbs... (but this seems like the year when I am late with most things).
I used some herbs that were picked and frozen earlier in summer, and some herbs that were still around in the herb garden.
The recipe is: 3 litres of fresh herbs and 2,5 dl salt (I use common table salt). Put herbs and salt into a food processor and blend untill a smooth mixture. Spread the mixture onto a baking tray and dry in the stove untill completely dry. Then run the dry herb salt mixture briefly in the food processor again for an nice and even herb salt, and pour into glass container.
I have made herb salt several times before. It it great fun to taste the result as it is never the same because the mix of herbs is always different .
There are probably several excellent herb blends one can put together, however I always make a random mix of the herbs I grow in my garden.
This time I used lovage, chives, thyme, oregano, sage and savory, plus a couple of small onions from the kitchen garden (I only had two litres of herbs, so I redused the amount of salt also and made a smaller batch than the recipe).
Resultatet ble tre fulle krydderglass.
Urtesaltet er testet, og var kjempegodt på middagsmaten :)

I have tasted herb salt and it is lovely, but making your own must be so exciting, as you never know the exact blend and outcome... and that makes it so unique! Enjoy it, Hilde! :)

Thanks Kristin :) Herb salt tastes good, and it is fun to make. We use it a lot too. I also like that in my homemade herb salt I know exactly what's in it and that there are no additives of any kind.
